Chapter 3, Data Input: Forms, in Web Application Design Handbook has lots
about documenting the interface using the labels. (The chapter is 63 pages
long.) 

You might also look at "Label Placement in Forms,"
http://www.uxmatters.com/MT/archives/000107.php. The authors actually tested
label positions for ease of use. Not the answer to your question, but
helpful nevertheless.

professional literature that deal with this approach?
